Dave.. I found the issue and you were right about the internet connection being the cause. I knew it was not an internal one - my network has static IPs on a 1000/10000 ethernet setup. It turned out to be the ISP hardware outside of the property that was renegotiating it's DHCP repeatedly and dropping any connections. When my wife started complaining about issues I knew it was not just the stream.
I think I am going to experiment with the HDMI-TO-CIS2 adapter in the hopes that I can get a better stream image from the RPi and dispose of the VBrick encoder/streamer completely.
