Hi guys,
I'm running Longmynd on a pi and connecting over network which shouldnt be the cause, but I cannot see to get Longmynd to lock on 66Ks signals using the Minitouner V2.
As of yet I have not tried using OpenTuner or Minitoune software because of cabling issues, but does the Minitouner V2 support 66Ks? I thought it did.

Yes it should be fine. The default frequency scan range for Longmynd is +/- SR * 1.5, but it helps to be on frequency for low SR.
What are you using to view the video? A VLC window or a viewer program?
To calibrate your LNB / NIM combination, set LM to receive the beacon and output the status info locally to 127.0.0.1 and then open another session to the RPi and run the netcat command to extract the actual receive frequency. That's a 'dash ell' in the netcat line.
Apply the difference when giving a frequency to LM. In my case, I would add 58 to the required frequency. For QuickTune, I would subtract 58 from the current LNB frequency.

I will most certainly look into this. I am using Longmynd client for tuning and viewing so I guess I can play with the offset setting.
